  • 1 tablespoon olive oil
  • 1/2 medium onion (chopped)
  • 1 pound ground turkey
  • 2 heaping tablespoons tomato paste
  • 2 tablespoons chili powder
  • 1 teaspoon garlic powder
  • 1 teaspoon ground cumin
  • 1 teaspoon smoked paprika
  • 1/4 teaspoon cayenne pepper (or to taste)
  • 1 (14 ounce) can red kidney beans (drained)
  • 2 (10.5 ounce) cans Rotel Diced Tomatoes & Green Chilies (with juices)
  • 1/2 cup water or chicken broth
  • Salt & pepper (to taste)
  • Optional toppings: shredded cheddar, cilantro, avocado, corn chips/strips, chopped scallions or red onions

Instructions

  1. Heat olive oil in a Dutch oven over medium-high heat. Sauté chopped onion until soft and translucent (about 5 minutes).
  2. Add ground turkey to the pot and cook until browned (about 5 minutes).
  3. Stir in tomato paste, chili powder, garlic powder, cumin, smoked paprika, and cayenne pepper.
  4. Mix in drained kidney beans and Rotel tomatoes with their juices; add water or chicken broth.
  5. Bring to a gentle boil; reduce heat and simmer for 15–20 minutes.
  6. Season with salt and pepper to taste; serve hot with desired toppings.
