  • 1 teaspoon vanilla extract
  • 1/2 cup all-purpose flour
  • 1/4 cup unsweetened cocoa powder
  • 1 teaspoon baking powder
  • 1 cup heavy whipping cream
  • 2 tablespoons powdered sugar
  • 1/2 cup chopped cherries (fresh or jarred)
  • 2 tablespoons cherry juice (optional)
  • 1/2 cup heavy cream
  • 4 ounces dark or semi-sweet chocolate, chopped
  • 1 tablespoon butter
  • 2 tablespoons powdered sugar (for dusting the towel)

Instructions

  1. Preheat your oven to 350°F (175°C). Line a jelly roll pan with parchment paper and lightly grease it.
  2. In a large bowl, beat the eggs and sugar until light and fluffy, then mix in vanilla extract.
  3. In another bowl, sift together flour, cocoa powder, baking powder, and salt. Gently fold into the egg mixture.
  4. Spread batter evenly in the prepared pan and bake until the cake springs back when lightly touched.
  5. While still warm, turn it onto a kitchen towel dusted with powdered sugar. Peel off parchment paper and roll up the cake with the towel inside. Let it cool completely.
  6. In a mixing bowl, beat heavy cream, powdered sugar, and vanilla extract until stiff peaks form. Fold in chopped cherries and cherry juice (if using).
  7. Unroll the cooled cake, spread whipped cream filling evenly over it, and gently roll it back up without towel assistance. Place on a serving platter seam-side down.
  8. Heat heavy cream until just simmering; pour over chopped chocolate and butter. Stir until smooth; let cool slightly before drizzling over the cake roll.
  9. Drizzle ganache over the cake roll and garnish with piped whipped cream, whole cherries, and chocolate curls.
