Savory enoki beef rolls are a delightful fusion of tender beef and delicate enoki mushrooms, wrapped together and cooked in a rich umami sauce. Perfect for a quick weeknight dinner or an impressive dish for special occasions, this recipe is both simple and satisfying.

  • 12 slices thinly sliced beef
  • 1 pack enoki mushrooms (split into 12 pieces)
  • 1/2 small yellow onion (sliced)
  • 2 large eggs
  • 1 cup dashi broth
  • 3 tablespoons soy sauce
  • 1/2 tablespoon sugar
  • 1/4 teaspoon black pepper
  • Garnish: diced green onion and sesame seeds

Instructions

  1. Prepare the enoki mushrooms by dividing them into small bunches. Roll each bunch tightly with one slice of beef.
  2. In a mixing bowl, combine the dashi broth, soy sauce, sugar, and black pepper; stir until sugar dissolves.
  3. Heat olive oil in a skillet over medium heat and sauté the sliced onions until caramelized.
  4. Place the rolled beef on top of the onions in the skillet, drizzle with sauce, cover, and cook for 3 minutes. Flip rolls gently and cook for an additional 1-2 minutes.
  5. Scramble eggs in a bowl; pour over the beef rolls and let simmer until fully cooked through.
  6. Serve garnished with green onions and sesame seeds alongside steamed rice.
