  • 2 cups Oreo crumbs
  • 4 tablespoons unsalted butter
  • 24 oz cream cheese (3 packages)
  • 1 cup granulated sugar
  • 1 teaspoon vanilla extract
  • 1/3 cup brewed espresso
  • 3 large eggs
  • 1/2 cup heavy cream
  • 1 cup semi-sweet chocolate chips

Instructions

  1. Preheat oven to 350°F (175°C).
  2. Combine Oreo crumbs and melted butter, then press into the base of a springform pan. Bake for 10 minutes and cool.
  3. Beat softened cream cheese until smooth. Mix in sugar, vanilla extract, espresso, then add eggs one at a time.
  4. Pour filling over cooled crust and bake in a water bath at 325°F (160°C) for 65–85 minutes.
  5. Cool gradually in the oven for an hour before refrigerating for at least 4 hours.
  6. Prepare ganache by pouring hot cream over chocolate chips; stir until smooth, then pour over chilled cheesecake.
