  • 1 large Onion
  • 2 Green Bell Peppers
  • 2 Red Bell Peppers
  • 4 cloves Garlic
  • 2 (28 oz) cans Crushed Tomatoes
  • 1 (15 oz) can Tomato Sauce
  • 1 (15 oz) can Diced Tomatoes
  • 1 (15 oz) can Kidney Beans, rinsed and drained
  • 1 (15 oz) can Black Beans, rinsed and drained
  • 1 (15 oz) can Pinto Beans, rinsed and drained
  • 1 cup Beef Broth
  • ¼ cup Chili Powder (adjust to taste)
  • 2 tablespoons Ground Cumin
  • 1 tablespoon Smoked Paprika
  • 1 tablespoon Dried Oregano
  • 1 teaspoon Cayenne Pepper (optional, for extra heat)
  • 1 teaspoon Salt (or to taste)
  • ½ teaspoon Black Pepper (or to taste)
  • 2 tablespoons Olive Oil or Vegetable Oil
  • 1 tablespoon Brown Sugar (optional, to balance acidity)
  • Fresh Cilantro, chopped (for garnish, optional)
  • Shredded Cheddar Cheese (for garnish, optional)
  • Sour Cream or Greek Yogurt (for garnish, optional)

Instructions

  1. Prep vegetables by chopping onion and bell peppers; mince garlic.
  2. In a large pot, heat olive oil over medium-high heat. Add ground beef and brown it.
  3. Drain excess grease and add chopped onions and bell peppers; sauté until softened.
  4. Stir in minced garlic and spices; cook for another minute.
  5. Pour in crushed tomatoes, tomato sauce, diced tomatoes, and beans; mix well.
  6. Add beef broth; bring to a simmer, then reduce heat to low and cover. Simmer for at least one hour.
