  • 2 egg yolks
  • 1 cup heavy cream
  • 8 oz mascarpone cheese
  • 1 tbsp pumpkin pie spice
  • 1/2 tsp baking soda
  • 1/2 tsp baking powder
  • 1/2 tsp salt
  • 2 tsp vanilla extract
  • 1 tbsp instant espresso powder
  • 1 cup powdered sugar
  • 1/4 cup heavy cream
  • 2 tsp instant espresso powder
  • 4.5 oz white chocolate, chopped

Instructions

  1. Preheat the oven to 350°F (175°C) and line baking sheets with parchment paper.
  2. In a large bowl, beat the unsalted butter and sugars until light and fluffy. Add egg yolks and vanilla; mix well.
  3. In another bowl, whisk flour, baking powder, baking soda, salt, and spices. Gradually combine with the wet mixture along with pumpkin.
  4. Scoop dough onto prepared sheets and bake for about 12 minutes until edges are golden but centers remain soft. Cool on wire racks.
  5. Whip heavy cream until soft peaks form then fold in mascarpone cheese and espresso powder.
  6. Once cooled, spread cream filling between two cookie halves to make sandwiches.
