Ingredients

Scale
  • 1 1/3 cup flour
  • 1/4 tsp kosher salt
  • 1/3 cup powdered sugar
  • 1/2 cup cold unsalted butter
  • 1 large egg
  • 1/2 tsp vanilla extract
  • 1/2 cup fresh lemon juice
  • 2 tbsp lemon zest
  • 1 cup granulated sugar
  • 1/4 tsp kosher salt
  • 2 large eggs
  • 4 large egg yolks

Instructions

  1. For the tart dough, blend flour, powdered sugar, and salt in a food processor. Add cold butter and pulse until pea-sized pieces form. Mix in egg and vanilla until a dough forms; chill for at least an hour.
  2. Roll out the chilled dough and fit it into a tart pan, trimming excess edges. Freeze for 20 minutes.
  3. Preheat oven to 350°F (180°C). Bake the tart shell for 15-20 minutes until golden brown; cool.
  4. For the lemon curd filling, combine lemon juice, zest, sugar, butter, and salt in a saucepan over low heat until melted. Whisk eggs and egg yolks together; gradually mix in warm lemon mixture while whisking continuously.
  5. Pour the lemon curd into the cooled tart shell and bake for an additional 10-15 minutes until set but slightly jiggly in the center. Cool completely before slicing.
