  • 10 tbsp packed light brown sugar (that’s ½ c + 2 tbsp)
  • 1 egg
  • ½ tsp vanilla extract
  • 1 ¼ c all-purpose flour

  • ½ tsp ground ginger
  • ¼ tsp baking soda
  • ½ tsp kosher salt
  • ½ c whole milk buttermilk
  • 1 tsp orange zest
  • ½ c fresh cranberries (chopped)
  • â…“ c pecan halves (chopped)
  • 2 tbsp fresh cranberries (chopped)
  • 2 tbsp pecan halves (chopped)
  • 2 tsp sanding sugar

Instructions

  1. Preheat oven to 350°F and line a muffin tin with paper liners.
  2. Cream together softened butter and brown sugar until smooth.
  3. Mix in the egg and vanilla extract until well combined.
  4. In a separate bowl, combine flour, baking powder, ground ginger, baking soda, and salt.
  5. Gradually add the dry ingredients to the wet mixture, alternating with buttermilk until just combined.
  6. Gently fold in orange zest, chopped cranberries, and pecans.
  7. Fill muffin liners two-thirds full with batter and sprinkle with reserved toppings.
