  • 2 tablespoons mayonnaise
  • 1 ½ tablespoons sweet pickle relish
  • 2 teaspoons Dijon mustard
  • Salt and pepper to taste
  • 1 ½ cups all-purpose flour
  • 2 large eggs, beaten
  • 1 ½ cups panko breadcrumbs
  • 1 cup finely crushed butter crackers
  • Thinly sliced chives for garnish
  • Oil for frying

Instructions

  1. Prepare the yolks: Scoop out the yolks into a mixing bowl and mix with mayonnaise, relish, and Dijon mustard. Season with salt and pepper, then mash until smooth.
  2. Bread the egg whites: Set up three shallow dishes—one with flour, one with beaten eggs, and one with panko-cracker mixture. Dredge each egg white in flour, coat in beaten eggs, then roll in the panko mixture.
  3. Fry the egg whites: Heat oil in a tall pot to 350°F. Fry the breaded egg whites until golden brown on both sides (about 2-3 minutes each). Drain excess oil on a cooling rack.
  4. Assemble: Spoon or pipe the yolk mixture into each fried egg white and garnish with chives before serving.
