  • 1/4 cup creamy peanut butter
  • 2 tablespoons honey
  • 1/2 teaspoon vanilla extract
  • 1/4 cup mini chocolate chips
  • 1 cup dark chocolate chips
  • 1 teaspoon coconut oil (optional)
  • Crushed peanuts (optional topping)
  • Sea salt flakes (optional topping)
  • Shredded coconut (optional topping)

Instructions

  1. In a mixing bowl, combine Greek yogurt, peanut butter, honey, and vanilla extract until smooth. Fold in mini chocolate chips.
  2. Line a baking sheet with parchment paper. Scoop tablespoon-sized portions onto the sheet and flatten slightly. Freeze for 1-2 hours until firm.
  3. Melt dark chocolate chips (and coconut oil if using) in a microwave-safe bowl in 30-second intervals until smooth.
  4. Dip each frozen disc into the melted chocolate, tapping off excess before returning to the parchment-lined sheet. Add toppings if desired.
  5. Freeze again for 15-20 minutes until the chocolate is set.
