  • 3 cups (390g) cake flour, spooned and leveled
  • 1 3/4 cups (350g) granulated sugar
  • 2 teaspoons baking powder
  • 1 teaspoon baking soda
  • 1/2 teaspoon salt
  • 12 tablespoons (180g) unsalted butter, room temperature
  • 1/3 cup (80mL) vegetable oil
  • 3/4 cup (180mL) whole milk, room temperature
  • 1 teaspoon white vinegar
  • 1 cup (240g) full-fat sour cream, room temperature
  • 1 tablespoon pure vanilla extract
  • 4 large eggs, room temperature
  • 3/4 cup (120g) rainbow jimmies sprinkles

Instructions

  1. Preheat the oven to 350°F (175°C) and prepare two 8-inch round cake pans.
  2. In a large mixing bowl, combine the dry ingredients: flour, baking powder, baking soda, and salt. Whisk together until evenly mixed.
  3. In another bowl, beat together the softened butter and granulated sugar until light and fluffy. Add in the vegetable oil and mix until combined.
  4. Incorporate the eggs one at a time, mixing well after each addition.
  5. Add in the sour cream, milk, vinegar, and vanilla extract. Mix until smooth.
  6. Gradually add in the dry ingredients until just combined; do not overmix.
  7. Gently fold in the rainbow sprinkles.
  8. Divide the batter evenly between the prepared pans and bake for 25-30 minutes or until a toothpick inserted into the center comes out clean.
  9. Remove from the oven and let them cool in pans for about 10 minutes. Turn out onto cooling racks to cool completely before frosting.
  10. For the frosting, beat the room-temperature butter until creamy. Gradually add powdered sugar while mixing on low speed. Add salt, vanilla extract, and enough milk to reach your desired consistency.
  11. Once cooled, place one layer on a serving plate; spread frosting on top, then add the second layer on top of frosting and frost sides and top of cake as desired.
