  • 3 medium potatoes, peeled & cubed
  • 2 tbsp butter (for mashed potatoes)
  • 1 cup milk (more if needed)
  • Salt & black pepper, to taste
  • 1012 medium shrimp, peeled & deveined
  • 1 tbsp butter (for shrimp)
  • 1 tsp olive oil
  • 2 cloves garlic, minced
  • 1 tsp paprika
  • 1 cup broccoli florets
  • 1 red bell pepper, diced
  • 1 yellow bell pepper, diced
  • 1 green bell pepper, diced
  • 1 tsp olive oil
  • Pinch of salt & pepper

Instructions

  1. Boil the peeled and cubed potatoes in salted water until fork-tender (about 12-15 minutes). Drain and mash with butter, milk, salt, and pepper until creamy.
  2. In a skillet over medium heat, heat olive oil and sauté the broccoli and diced peppers with salt and pepper for about 4-5 minutes until tender.
  3. In another skillet, melt butter with olive oil over medium heat. Add minced garlic and sauté for about 30 seconds. Then add shrimp seasoned with paprika, salt, and pepper; cook for 2-3 minutes per side until pink and slightly golden.
  4. Serve by spooning mashed potatoes onto one side of the plate, arranging shrimp and sautéed veggies on the other side.
