  • 3.4 lb bone-in lamb shoulder, trimmed
  • Salt & freshly ground black pepper
  • 6 cloves garlic, smashed
  • 3 tbsp Dijon mustard
  • 2 tbsp honey
  • 2 tbsp olive oil
  • 2 sprigs fresh rosemary
  • 2 sprigs fresh thyme
  • 1 bay leaf
  • 1 cup chicken broth

Instructions

  1. Preheat your oven to 300°F (150°C).
  2. Trim excess fat from the lamb shoulder and season generously with salt and pepper.
  3. In a Dutch oven, heat olive oil over medium-high heat and sear the lamb until browned on each side (about 4-5 minutes).
  4. Remove lamb and add smashed garlic to the pot; stir until fragrant.
  5. Mix in Dijon mustard and honey until well combined.
  6. Return the lamb to the pot, pour in chicken broth to cover half the meat, and add herbs.
  7. Cover with a lid and bake for 3–4 hours until fork-tender.
  8. Let rest before slicing or shredding; serve warm.
