  • 1 large bulb of garlic
  • Olive oil
  • 1.3kg baking potatoes
  • 75g butter (30g melted)
  • 2 tbsp heavy cream
  • 60g grated parmesan cheese
  • 4 large egg yolks
  • Salt and pepper
  • Fresh parsley (for garnish)

Instructions

  1. Roast the garlic by drizzling it with olive oil, wrapping it in foil, and baking at 180°C for about 50-60 minutes until soft.
  2. Boil peeled and diced potatoes in salted water until tender, about 15-20 minutes. Drain and allow to steam dry.
  3. Mash the potatoes with butter, heavy cream, roasted garlic, and parmesan until smooth. Season generously and stir in egg yolks.
  4. Pipe swirls onto a baking tray lined with parchment paper.
  5. Bake at 200°C for 15-20 minutes or until golden brown.
