  • 4 green or slightly yellow plantains
  • 4 cloves garlic, minced
  • 23 tbsp olive oil or butter
  • 1 lb medium shrimp, peeled and deveined
  • Salt and pepper to taste
  • Optional: beef cracklings, cilantro, lime wedges

Instructions

  1. Peel and cut plantains into 1–2 inch pieces. Boil until tender (10–15 minutes) or fry for extra flavor.
  2. Use a mortar and pestle to mash boiled plantains with minced garlic, olive oil, and optional beef cracklings. Season with salt and pepper.
  3. In a skillet, heat oil over medium heat. Sauté minced garlic until fragrant, then add shrimp seasoned with salt and pepper, cooking until pink (about 3–4 minutes per side).
  4. Mold the mofongo onto plates or bowls and top with garlic shrimp. Drizzle pan juices over the dish.
  5. Garnish with fresh cilantro or paprika if desired, serve immediately with lime wedges.
