  • 1/2 cup lukewarm whole milk
  • 2 tsp active dry yeast or instant yeast
  • 1/4 cup granulated sugar
  • 3 cups all-purpose flour
  • 1 cup ground almonds
  • 1 tsp Christmas spice mix or pumpkin spice mix
  • 3/4 cup softened butter
  • 2 eggs (room temperature)
  • 1 tsp vanilla extract
  • 3.5 oz candied citrus peel
  • 1 cup powdered sugar (for dusting)

Instructions

  1. Soak the raisins and currants in boiling water until plumped.
  2. Activate the yeast by mixing it with warm milk and sugar; let it froth.
  3. In a large bowl, combine flour, ground almonds, spice mix, and remaining sugar.
  4. Add the activated yeast mixture, butter, vanilla extract, and eggs; mix until combined.
  5. Fold in the drained fruits and candied citrus peel.
  6. Knead the dough until smooth; let it rise in a warm place covered for 1-2 hours.
  7. Preheat oven to 350°F (180°C) and line a baking sheet with parchment paper.
  8. Shape the dough into small balls and place them on the sheet.
  9. Bake for 15-20 minutes until golden brown; cool on a wire rack.
  10. Dust warm cookies with powdered sugar before serving.
