  • 45 ripe peaches (peeled and diced)
  • 1/3 cup cane sugar
  • 2 tablespoons cornstarch
  • 1/2 teaspoon ground cinnamon
  • 1 tablespoon orange juice
  • 1 1/4 cups gluten-free flour blend
  • 1 cup gluten-free quick oats
  • 1/4 cup brown sugar
  • 1/4 cup cane sugar
  • 1/2 teaspoon sea salt
  • 6 tablespoons coconut oil (solid)
  • 2 tablespoons So Delicious unsweetened coconut milk
  • 2 tablespoons pure maple syrup

Instructions

  1. Preheat your oven to 375°F (190°C) and prepare an 8×8-inch baking pan with parchment paper.
  2. In a bowl, combine peeled and diced peaches with cane sugar, cornstarch, ground cinnamon, and orange juice; set aside.
  3. In another bowl, mix gluten-free flour blend, quick oats, brown sugar, cane sugar, and sea salt. Incorporate solid coconut oil, maple syrup, and coconut milk until combined.
  4. Spread 2/3 of the oat mixture in the pan as the base. Layer the peach mixture on top and sprinkle remaining oat crumble over it.
  5. Bake for 40-45 minutes until bubbly and golden brown. Allow cooling before slicing.
