  • 600 g rib-eye steak, trimmed and pounded
  • 300 g cremini mushrooms, sliced
  • 1 medium onion, thinly sliced
  • 1 Tbsp Dijon mustard
  • 150 ml full-fat sour cream
  • 500 ml low-salt beef broth
  • 2 Tbsp butter
  • 1 Tbsp plain flour
  • 2 Tbsp neutral oil
  • Kosher salt and freshly cracked black pepper to taste
  • Chopped chives for garnish
  • Egg noodles or tagliatelle for serving

Instructions

  1. Pound the rib-eye steak until about ¾ cm thick, then slice against the grain.
  2. Season the beef with salt and pepper. In a cast iron skillet, heat oil over high heat and sear the beef in batches until browned (about 30 seconds on each side). Set aside.
  3. Lower heat to medium, melt butter in the same skillet, add onions, and cook for one minute. Add mushrooms and cook until golden brown.
  4. Sprinkle flour over the mixture, stir for one minute. Deglaze with half a cup of beef broth, scraping up any bits stuck to the pan.
  5. Stir in remaining broth and mustard; simmer for five minutes.
  6. Remove from heat, stir in sour cream until smooth, then return beef with its juices back to the pan to warm through.
  7. Serve over buttered noodles or tagliatelle, garnished with chives.
