  • 1 cup mushrooms, sliced
  • 1 tsp olive oil
  • 2 eggs
  • Salt & pepper, to taste
  • Fresh parsley, chopped (for garnish)

  • Avocado, sliced or mashed
  • 56 cherry tomatoes, halved
  • 2 tbsp feta cheese, crumbled
  • Salt & pepper, to taste
  • Fresh parsley, chopped (for garnish)

Instructions

  1. For the Mushroom Toast: Heat olive oil in a skillet over medium heat. Sauté sliced mushrooms with a pinch of salt for about 5 minutes until golden brown. In a separate pan, scramble eggs until soft and creamy. Toast the rustic bread until golden, then layer it with sautéed mushrooms and scrambled eggs. Garnish with fresh parsley.
  2. For the Avocado Toast: Toast another slice of rustic bread until golden. Spread avocado slices on top, arrange halved cherry tomatoes over it, sprinkle crumbled feta cheese, and season with salt and pepper. Garnish with chopped parsley.
