  • 3 tablespoons confectioners' sugar
  • 3/4 teaspoon vanilla extract
  • 1/2 cup chilled mascarpone cheese
  • Cocoa powder (for dusting)

Instructions

  1. Preheat your oven to 375°F (190°C) and line a baking sheet with parchment paper.
  2. In one bowl, combine flour and espresso; set aside. In another bowl, beat egg whites until foamy, gradually adding sugar until stiff peaks form.
  3. Whisk together egg yolks, whole eggs, and sugar until pale. Gently fold in the flour mixture, then add beaten egg whites until no streaks remain.
  4. Pour batter onto the prepared baking sheet and bake for about 8 minutes or until lightly golden.
  5. For the cream filling, beat heavy cream with confectioners' sugar and vanilla until soft peaks form; gently fold in mascarpone cheese.
