  • 1 tbsp olive oil
  • 1 tsp smoked paprika
  • 1 tsp dried oregano
  • 1 tsp garlic powder
  • Salt & pepper
  • 2 cups chopped romaine lettuce
  • 1 cup cherry tomatoes, halved
  • 1 cucumber, sliced
  • 1 cup Greek yogurt
  • 1 cucumber, grated and drained
  • 1 clove garlic, minced
  • 1 tsp lemon juice
  • 1 tsp fresh dill, chopped

Instructions

  1. Prepare the Tzatziki Dip: In a mixing bowl, combine Greek yogurt, grated cucumber, minced garlic, lemon juice, chopped dill, salt, and pepper. Mix well and chill until serving.
  2. Cook the Chicken: Rub chicken breasts with olive oil and seasonings (smoked paprika, oregano, garlic powder, salt & pepper). Grill over medium heat for 6-7 minutes per side until cooked through (165°F internal temperature). Slice into strips.
  3. Assemble the Salad Bowl: Layer chopped romaine in bowls and top with cucumber slices, halved cherry tomatoes, grilled chicken strips, and a generous scoop of tzatziki.
