  • 4 large tomatoes
  • 4 large bell peppers
  • 1 cup rice
  • 1 onion, finely chopped
  • 2 cloves garlic, minced
  • 1/4 cup olive oil
  • 1/4 cup fresh parsley, chopped
  • 1/4 cup fresh mint, chopped
  • Salt and pepper to taste
  • 1 cup water

Instructions

  1. Preheat your oven to 180°C (350°F).
  2. Cut the tops off the tomatoes and bell peppers, then scoop out their insides.
  3. In a pan over medium heat, heat olive oil; sauté the onion and garlic until soft.
  4. Add rice, parsley, mint, salt, and pepper; stir well for a few minutes.
  5. Mix in the reserved vegetable insides and water; cook until rice is half done.
  6. Stuff each tomato and bell pepper with the rice mixture.
  7. Place them upright in a baking dish, cover with tops, drizzle with olive oil, and bake for about 1 hour or until tender.
