  • 1 1/4 pounds boneless, skinless chicken breasts
  • 1 teaspoon salt
  • 2 tablespoons plain yogurt (for marinade)
  • 2 cloves garlic, minced
  • 1 tablespoon fresh oregano, minced (or 1 1/2 teaspoons dried)
  • 1/8 teaspoon ground black pepper
  • 1 teaspoon lemon juice
  • 1 tablespoon extra virgin olive oil
  • 2 lemons, thinly sliced
  • 1 cup plain yogurt (for tzatziki)
  • 2 cloves garlic, minced (for tzatziki)
  • 1/2 teaspoon kosher salt (for tzatziki)
  • 1/8 teaspoon black pepper (for tzatziki)
  • 1 tablespoon lemon juice (for tzatziki)
  • 1 cucumber, peeled and grated (for tzatziki)

Instructions

  1. Soak wooden skewers in water for 30 minutes.
  2. In a bowl, mix salt, yogurt, minced garlic, oregano, pepper, lemon juice, and olive oil. Coat chicken pieces in the marinade and refrigerate for 30 minutes to 1 hour.
  3. Prepare tzatziki by squeezing excess water from grated cucumber and mixing it with yogurt, minced garlic, salt, pepper, and lemon juice. Chill until serving.
  4. Preheat grill to medium-high heat.
  5. Assemble skewers by threading marinated chicken and lemon slices onto skewers.
  6. Grill skewers for about 5–7 minutes on each side until chicken reaches an internal temperature of 165°F (75°C).
  7. Serve hot with chilled tzatziki sauce.
