  • 6 cups chicken broth

  • 1 cup celery, diced
  • 1 onion, chopped
  • 2 cloves garlic, minced
  • 1 cup orzo pasta (or rice)
  • 2 large lemons (juiced and zested)
  • 1 teaspoon dried oregano
  • 1 teaspoon dried thyme
  • Salt and pepper to taste

  1. In a large pot, place the chicken breasts and cover them with chicken broth. Bring to a gentle boil.
  2. Reduce heat and simmer until the chicken is fully cooked (about 15-20 minutes). Remove the chicken and let it cool.
  3. In another pot, heat a splash of olive oil over medium heat. Add chopped onion, carrots, and celery; sauté until softened (about 5-7 minutes).

  5. Shred the cooled chicken and add it back to the pot with the sautéed vegetables.
  6. Pour in orzo pasta (or rice) along with more chicken broth. Stir in lemon juice, lemon zest, oregano, thyme, salt, and pepper.
