  • 8 chicken pieces
  • 4 potatoes
  • 100 ml lemon juice
  • 100 ml olive oil
  • 5 garlic cloves
  • 1 large onion
  • 1 tbsp fresh rosemary
  • 1.5 tbsp honey
  • 1.5 tbsp mustard
  • salt
  • pepper
  • oregano
  • paprika

Instructions

  1. Preheat your oven to 175°C (fan forced).
  2. Place chicken skin side up in a lined baking dish and surround it with cut potatoes.
  3. Season generously with salt, pepper, oregano, and paprika on both sides.
  4. In a blender, combine lemon juice, olive oil, garlic, onion, rosemary, honey, and mustard; blend until smooth.
  5. Pour half of the marinade mixture over the chicken and potatoes; coat evenly.
  6. Flip the chicken skin side up again and cover with the remaining marinade.
  7. Cover the dish with wet baking paper followed by aluminum foil and bake for 90 minutes.
  8. Remove covers and bake for an additional 30 minutes until golden brown.
  9. Let it rest for about 10 minutes before serving.
