  • 4 lamb shanks (about 1600g total)
  • 1/4 cup olive oil
  • 1 1/2 cups pearl onions, peeled
  • 2 celery sticks, diced
  • 4 garlic cloves, minced
  • 1 cup red apple vinegar
  • 4 cups chicken broth
  • 28 oz jar of tomato sauce
  • 2 lbs Yukon gold potatoes
  • salt and pepper

Instructions

  1. Preheat a Dutch oven over medium-high heat and add olive oil.
  2. Season lamb shanks with salt and pepper, then sear each side until browned (3–4 minutes). Remove and set aside.
  3. In the same pot, add pearl onions, celery, and garlic; sauté for about 5 minutes.
  4. Deglaze with red apple vinegar; add spices (oregano, paprika, garlic powder, all spice, cinnamon sticks, salt, pepper, bay leaves) and stir.
  5. Pour in chicken broth and tomato sauce; bring to a simmer before returning the lamb shanks to the pot.
  6. Cover and reduce heat; braise gently for about 150 minutes until tender.
  7. Meanwhile, boil chopped potatoes with butter and seasoning until fork-tender; mash with milk and cream cheese.
  8. Serve lamb shanks over mashed potatoes garnished with fresh parsley.
