  • 1 lb ground beef (or ground turkey)
  • 23 roasted green chiles (Hatch or poblano)
  • 2 medium tomatoes
  • 1 large potato
  • ½ cup peas (optional)
  • 1 onion (finely chopped)
  • 2 cloves garlic (minced)
  • ½ tsp ground cumin
  • ½ tsp ground coriander
  • ½ tsp dried oregano
  • Salt and pepper (to taste)
  • ¼ cup beef broth or water
  • 2 tbsp olive oil

Instructions

  1. Heat olive oil in a skillet over medium heat. Add chopped onion and sauté until translucent. Stir in minced garlic and cook for an additional minute.
  2. Add ground beef (or turkey) to the skillet. Cook until browned, breaking it apart with a spoon while seasoning with salt, pepper, cumin, coriander, and oregano.
  3. Stir in diced tomatoes, chopped green chiles, diced potato, and peas if using. Pour in beef broth or water.
  4. Reduce heat to low and cover the skillet. Simmer for about 20 minutes until all vegetables are tender.
