  • Sweet potatoes

  • Greek yogurt

Instructions

  1. Preheat the oven to 425°F (220°C). Toss sweet potato wedges in olive oil, smoked paprika, salt, and pepper; roast for 25-30 minutes until golden.
  2. Season chicken with olive oil, garlic powder, lemon juice, salt, and pepper. Grill in a cast iron skillet over medium-high heat for about 6-7 minutes per side until cooked through.
  3. In a mixing bowl, combine diced avocado, halved cherry tomatoes, chopped red onion, fresh herbs, lime juice, salt, and pepper to make the salsa.
