  • 1 chicken breast
  • 1 tbsp olive oil
  • 1 tsp garlic powder
  • 1 tsp oregano
  • 1 medium sweet potato
  • 1 tbsp olive oil
  • 1 tsp paprika
  • 1 avocado
  • 1 cup cherry tomatoes
  • 1 small red onion
  • 1 cup mixed greens or chopped romaine
  • 1 tsp olive oil
  • 1 tsp lemon juice
  • 2 tbsp plain Greek yogurt
  • 1 tsp lemon juice
  • 1 tsp chopped parsley or cilantro
  • Salt & pepper to taste
  • Salt to taste

Instructions

  1. Preheat your oven to 200°C (400°F). Toss sweet potato wedges in olive oil, paprika, and salt; spread on a baking sheet and roast for 25–30 minutes until golden brown.
  2. Coat chicken strips in olive oil, garlic powder, oregano, salt, and pepper. Grill or pan-sear over medium-high heat for about 4–5 minutes per side until cooked through.
  3. In a mixing bowl, combine mixed greens, diced avocado, halved cherry tomatoes, and sliced red onion. Drizzle with olive oil and lemon juice; season with salt and pepper.
  4. Mix Greek yogurt with lemon juice, herbs, salt, and pepper in another bowl until smooth.
  5. Serve grilled chicken alongside roasted sweet potatoes and salad; drizzle with the herbed yogurt sauce.
