  • 3 pounds boneless chuck roast (cut into 1-inch pieces)
  • Salt and pepper to taste
  • 2 large onions (sliced)
  • 3 cloves garlic (minced)
  • 2 tablespoons tomato paste
  • 2 tablespoons flour
  • 2.5 cups beef broth
  • 1 tablespoon brown sugar
  • 1 pound carrots (peeled and cut into chunks)
  • 1.5 pounds Yukon Gold potatoes (peeled and cut into pieces)
  • Fresh parsley for garnish

Instructions

  1. Heat vegetable oil in a Dutch oven over medium-high heat. Add diced turkey bacon; cook until crispy, about 4-5 minutes. Remove and set aside.
  2. Season beef with salt and pepper; brown in batches for about 1-2 minutes on each side. Remove from pot.
  3. Sauté onions in the same pot until browned, about 5 minutes, then add minced garlic and cook until fragrant.
  4. Stir in flour and tomato paste; cook for another minute before adding beef broth while scraping up any browned bits.
  5. Return beef to the pot, along with brown sugar, thyme sprigs, salt, and pepper. Bring to a boil.
  6. Reduce heat; cover and simmer for one hour.
  7. Add carrots and potatoes; cover again and simmer for another hour until meat is tender.
  8. If desired thickness isn’t achieved, increase heat to medium-high to reduce before serving.
  9. Adjust seasoning if necessary; garnish with parsley before serving.
