  • 1 cup dark chocolate chips
  • 1 tsp agar-agar powder

  1. Preheat the oven to 350°F (175°C) and grease two round cake pans.
  2. In a bowl, whisk together flour, cocoa powder, sugar, and baking powder.
  3. In another bowl, combine eggs, vegetable oil, and whole milk; whisk until frothy. Mix this into the dry ingredients until just combined.
  4. Divide the batter between prepared pans and bake for 25-30 minutes until a toothpick comes out clean. Cool completely.
  5. Melt dark chocolate chips in a microwave or double boiler. Heat raspberries with agar-agar until dissolved; combine with melted chocolate to form mousse.
  6. Layer one cooled cake with half the mousse, top with the second layer, and spread remaining mousse on top. Chill until set before serving.
