  • 1 leg quarter (bone-in, skin-on) chicken
  • 1 tsp olive oil
  • 1 tsp dried thyme or Italian seasoning
  • Salt & pepper, to taste
  • 1 clove garlic, minced
  • 1 cup green beans, trimmed
  • 1 tsp olive oil or butter
  • 1 garlic clove, minced
  • 1 cup baby carrots
  • 1 tsp olive oil
  • 1 tsp honey or maple syrup
  • Pinch of salt & black pepper

Instructions

  1. Preheat your oven to 400F (200C). Rub the chicken leg quarter with olive oil, thyme (or Italian seasoning), minced garlic, salt, and pepper. Place it on a baking sheet and roast for 35-40 minutes until the skin is golden brown and juices run clear.
  2. While the chicken is roasting, toss baby carrots in a mixing bowl with olive oil, honey (or maple syrup), salt, and pepper. Spread them out on another baking sheet and roast for 25-30 minutes. Turn them once during cooking until they’re tender and lightly caramelized.
  3. In a skillet over medium heat, add olive oil (or butter) along with minced garlic. Once fragrant, add trimmed green beans. Sauté for about 6-8 minutes while tossing occasionally until they are bright in color and slightly blistered.
  4. Once everything is cooked to perfection, serve the roasted chicken hot alongside the glazed carrots and sautéed green beans. If desired, spoon any pan juices over the chicken for extra flavor!
