  • 1 ¼ cup all-purpose flour
  • ½ cup unsalted butter, cold and cut into ½" cubes
  • 1 egg yolk
  • 2 tablespoons heavy cream or whole milk
  • 1 teaspoon granulated sugar
  • 1 teaspoon fine sea salt
  • ¾ teaspoon freshly ground pepper
  • 8 ounces goat cheese
  • 23 tablespoons heavy cream
  • 2 medium lemons, zested and juiced – divided
  • 1 ½ tablespoons chopped parsley
  • 1 tablespoon chopped chives
  • ½ teaspoon fine sea salt (for filling)
  • ½ teaspoon freshly ground pepper (for filling)
  • 1 can medium California Ripe Olives, green or black
  • 2 tablespoons olive oil
  • 1 tablespoon lemon juice & 1 teaspoon lemon zest – divided
  • 2 cloves garlic, crushed
  • ¼ teaspoon salt (for topping)
  • ¼ teaspoon fresh cracked pepper
  • 1 teaspoon chopped parsley (for topping)
  • 1 teaspoon chopped chives (for topping)
  • lemon zest & herbs for decoration

Instructions

  1. Preheat oven to 375°F (190°C).
  2. In a food processor, combine flour, sugar, salt, and pepper. Add cold butter cubes and pulse until mixture resembles coarse crumbs. In a bowl, whisk together egg yolk and heavy cream. Gradually add to flour mixture until dough forms.
  3. Press dough into disc shape, wrap in plastic wrap, and refrigerate for at least 30 minutes.
  4. In a mixing bowl, beat goat cheese until smooth. Add 2-3 tablespoons of heavy cream along with lemon zest from one lemon. Stir in chopped parsley, chives, salt, and pepper until well combined.
  5. Roll out chilled dough on a floured surface to about ¼ inch thick. Cut out circles to fit your tartlet pans and press into pans firmly. Spoon goat cheese filling into each crust evenly.
  6. In a bowl, mix olives with olive oil, crushed garlic, lemon juice & zest from one lemon. Season with salt and pepper; fold in chopped parsley and chives.
  7. Top each filled tartlet with olive mixture. Bake in preheated oven for about 20-25 minutes or until golden brown. Let cool slightly before serving; garnish with additional herbs if desired.
