Ingredients

Scale
  • 1 cup short-grain white rice
  • 1¼ cups water
  • 2 tbsp rice vinegar
  • 1 tbsp sugar
  • ½ tsp salt
  • 4 roasted nori sheets (sushi-grade)
  • 1 cup imitation crab (or real crab meat)
  • 1 ripe avocado, sliced
  • 1 small cucumber, cut into thin strips
  • 2 tbsp spicy mayo (mayo + sriracha)
  • 1 tbsp eel sauce
  • ½ cup toasted panko breadcrumbs or French fried onions
  • Cream cheese strips
  • Thinly sliced jalapeño
  • Teriyaki glaze

Instructions

  1. Rinse the short-grain white rice until water runs clear to remove excess starch.
  2. Cook rice with water in a rice cooker or on the stovetop until tender.
  3. In a saucepan, mix together rice vinegar, sugar, and salt until dissolved over low heat.
  4. Fold this mixture gently into the warm rice and allow it to cool.
  5. Wrap your bamboo sushi mat in plastic wrap to keep it clean.
  6. Place a bowl of water mixed with a bit of rice vinegar nearby to help prevent sticking.
  7. Lay a sheet of nori, shiny side down, on the mat.
  8. Spread cooled sushi rice evenly over nori, leaving about ½ inch at the top edge.
  9. Flip nori so that rice faces down on the mat.
  10. Layer fillings such as crab, avocado, and cucumber, along with any optional add-ins like cream cheese or jalapeño across the center.
  11. Lift one edge of the mat with your thumbs while holding the filling in place with your fingers.
  12. Roll tightly into a cylinder shape while sealing the edge by moistening it slightly with water.
  13. Brush the top of your rolled sushi with either spicy mayo or eel sauce for flavor.
  14. Generously sprinkle with toasted panko breadcrumbs or French fried onions for that crunchy texture.
  15. Slice your roll into 8 pieces for easy serving.
  16. Serve alongside soy sauce, pickled ginger, and wasabi for dipping.
