  • 4 cups all-purpose flour
  • 1/4 cup granulated sugar
  • 1 tablespoon salt
  • 1 tablespoon active dry yeast
  • 1 1/4 cups warm milk
  • 2 tablespoons unsalted butter, melted
  • 1 cup unsalted butter, cold, shaped into a flat square
  • 1 egg (for egg wash)
  • 1 tablespoon milk (for egg wash)

Instructions

  1. In a bowl, mix flour, sugar, and salt. Dissolve yeast in warm milk; let it sit until foamy. Combine all ingredients and knead until smooth. Shape into a rectangle, wrap in plastic, and refrigerate for 1 hour.
  2. Prepare the cold butter block by rolling it into a flat square between parchment paper.
  3. Roll the chilled dough into a square, enclose the butter block, and perform three turns (rolling out and folding) with chilling intervals.
  4. After the final roll-out, cut triangles from the dough and shape them into croissants.
  5. Let them rise for about 2 hours before brushing with egg wash.
  6. Preheat oven to 400°F and bake for 18–22 minutes until golden brown.
