  • 8 lemons (for zest)
  • 4 cups water
  • 3 cups granulated sugar

Instructions

  1. Peel the lemons carefully, avoiding too much of the white pith. Place the lemon peels in a glass container.
  2. Add the freshly squeezed lemon juice to the container and seal it tightly. Store it in a cool, dark place for at least two weeks, shaking gently every few days.
  3. In a medium pot, combine the sugar and water over medium heat, stirring until fully dissolved. Let cool before refrigerating for 10-15 minutes.
  4. After steeping, strain the lemon mixture through a fine strainer into another container to remove solids.
  5. Mix the cooled syrup with the strained lemon concentrate thoroughly.
  6. Transfer your limoncello into glass bottles and label if desired.
