  • 1 lb boneless, skinless chicken thighs
  • 1 cup long-grain rice
  • 1/2 cup BBQ sauce
  • 1/4 cup honey
  • 1 tsp garlic powder
  • 1 tsp onion powder
  • 1/2 tsp smoked paprika
  • Salt and pepper to taste
  • 1 cup mixed vegetables (optional)

Instructions

  1. Season chicken thighs with garlic powder, onion powder, smoked paprika, salt, and pepper.
  2. Heat a skillet over medium heat; sear chicken for 3–4 minutes on each side until golden brown.
  3. In a small bowl, mix BBQ sauce and honey.
  4. Toast uncooked rice in the same skillet for 1–2 minutes.
  5. Add chicken broth and half of the BBQ honey mixture to the skillet; stir well.
  6. Return seared chicken to the pan and pour remaining BBQ sauce over top.
  7. Cover and simmer on low for about 15 minutes.
  8. If using mixed vegetables, add them after 15 minutes; cover and cook for an additional 5 minutes until rice is tender.
