  • 1/2 cup light brown sugar
  • 3/4 cup granulated sugar (divided)
  • 1 large egg
  • 1 teaspoon vanilla extract
  • 2 1/4 cups all-purpose flour
  • 1 ounce packet of hot chocolate mix
  • 3 tablespoons unsweetened cocoa powder
  • 1/2 teaspoon baking soda
  • 1/2 teaspoon kosher salt
  • 120 mini vegan marshmallows

Instructions

  1. Preheat the oven to 350°F and line a cookie sheet with parchment paper.
  2. In a mixing bowl, cream together softened butter, brown sugar, and half the granulated sugar until fluffy. Add the egg and vanilla extract; mix well.
  3. Combine flour, hot chocolate mix, cocoa powder, baking soda, and salt in another bowl. Gradually add this mixture to the wet ingredients until just combined.
  4. Using a cookie scoop, portion out dough and roll into balls. Flatten slightly; place on prepared sheet. Top each with mini marshmallows and wrap the dough around them.
  5. Roll each ball in remaining granulated sugar before baking for about 10-12 minutes or until cracked on top.
