  • â…“ cup aquafaba
  • 2 tablespoons lemon juice
  • â…“ cup tahini
  • 1 tablespoon extra virgin olive oil
  • ½ clove garlic (or more to taste)
  • Salt and ground cumin (optional)

Instructions

  1. Reserve 2 tablespoons of chickpeas for garnish. In a food processor, combine drained chickpeas, aquafaba, lemon juice, garlic, and salt. Blend for about 3 minutes until smooth.
  2. Add tahini and cold water; blend for an additional 2 minutes.
  3. Pour in olive oil and adjust consistency with more water if needed, blending until creamy.
  4. Taste and adjust seasoning if necessary.
  5. Serve by spreading in a bowl, creating a well in the center for olive oil and topped with reserved chickpeas and chopped parsley.
