  • 2 1/4 cups mashed overripe bananas
  • 2 cups all-purpose flour
  • 1/4 tsp salt
  • 1 tsp baking soda
  • 1/2 tsp nutmeg
  • 1/2 cup butter
  • 1/4 cup white sugar
  • 1/4 cup brown sugar
  • 2 eggs, beaten
  • 1 tsp vanilla extract
  • 1 tsp cinnamon

Instructions

  1. Mash the bananas until you have 2 1/4 cups.
  2. In a bowl, combine flour, salt, baking soda, and nutmeg.
  3. In another bowl, cream together butter and both sugars. Mix in cinnamon, eggs, vanilla, and mashed bananas.
  4. Combine both mixtures gently without overmixing.
  5. Pour batter into a greased pan.
  6. Place a trivet in the Instant Pot with 1 cup of water. Cover the pan with foil and create handles.
  7. Cook on manual for 50 minutes and perform a quick release.
  8. Let cool on a rack before slicing.
