  • 1 pound ground turkey
  • 1/2 teaspoon salt
  • 1/2 teaspoon pepper
  • 2 tablespoons unsalted butter
  • 2 cups finely diced yellow onion
  • 2 cups finely diced carrots
  • 1 tablespoon minced garlic
  • 71/2 cups chicken broth
  • 11/2 cups heavy cream
  • 2 cups mini bowtie pasta
  • 21/2 packed cups finely chopped kale
  • 1/2 cup sun-dried tomatoes, finely chopped
  • 1/2 packed cup grated Parmesan cheese

Instructions

  1. In a large pot, heat olive oil over high heat. Add ground turkey, salt, and pepper. Sear until browned, then remove with a slotted spoon.
  2. Reduce heat to medium; add butter, onions, carrots, and garlic. Sauté until tender (7-9 minutes). Sprinkle flour and stir for 1 minute.
  3. Gradually whisk in chicken broth until smooth. Bring to a boil and add pasta; cook according to package instructions minus one minute.
  4. Lower heat, mix in heavy cream, kale, and sun-dried tomatoes. Stir in Parmesan until melted before returning the sausage to the pot.
  5. Serve hot, adjusting consistency with more broth if desired.
