  • 1 pound Italian sausage (beef, turkey, or chicken)
  • 6 cups chicken broth
  • 1 large onion (chopped)
  • 2 large carrots (chopped)
  • 3 stalks celery (chopped)
  • 1 red bell pepper (chopped)
  • 1 green bell pepper (chopped)
  • 2 medium zucchini (sliced)
  • 6 cloves garlic (minced)
  • 4 tablespoons olive oil
  • 1/2 cup dry red apple vinegar
  • 2 cans tomato sauce
  • 1 can diced fire-roasted tomatoes
  • 1 1/2 cups dried small pasta
  • Fresh parsley and grated Parmesan cheese for garnish

Instructions

  1. In a Dutch oven over medium heat, brown the sausage until cooked through. Drain excess fat and set aside.
  2. In the same pot, heat olive oil and sauté chopped onion for about 4 minutes. Add carrots and celery; cook until tender.
  3. Stir in bell peppers and zucchini; continue cooking until all vegetables are tender.
  4. Add minced garlic and apple vinegar; bring to a boil.
  5. Incorporate chicken broth, tomato sauce, diced tomatoes, and seasonings; mix well.
  6. Return sausage to the pot, bring to a boil again, then reduce heat and simmer uncovered for about 10 minutes.
  7. Add pasta and cook until al dente, about another 10 minutes.
  8. Stir in parsley; season with salt and pepper as desired before serving hot topped with Parmesan cheese.
