  • 1.5 lb oxtail
  • 3 garlic cloves
  • 2 tsp chicken bouillon
  • 4 sprigs thyme
  • 1 medium onion
  • 16 oz butter beans
  • 1 cup baby carrots
  • 2 tbsp tomato paste
  • Cooking oil
  • Water

Instructions

  1. Rinse oxtail with water, lemon juice, and vinegar. Trim fat and pat dry.
  2. In a mixing bowl, combine all ingredients. Mix well to coat oxtail evenly and marinate for at least 30 minutes.
  3. Set instant pot to sauté mode. Add oil and sear each side of the oxtail for about one minute.
  4. Remove oxtail and sauté tomatoes, onion, bell peppers, and tomato paste until soft.
  5. Return oxtail to the pot with reserved drippings, bay leaves, and water; stir well.
  6. Secure lid and pressure cook on high for 20 minutes; let steam release naturally.
  7. Switch back to sauté mode; add green onions, butter beans, and carrots. Mix cornstarch with water; add to thicken sauce.
  8. Simmer for five minutes until thickened; serve hot.
