  • 12 ounces sweet potato glass noodles
  • 16 ounces beef (cut into strips) or turkey
  • 2 large eggs (beaten)
  • 1 large carrot (peeled and julienned)
  • 1 medium yellow onion (thinly sliced)
  • 3 mushrooms (thinly sliced)
  • 2 cups baby spinach
  • 7 tablespoons soy sauce (light sodium)
  • 3 tablespoons honey
  • 2 tablespoons toasted sesame oil

Instructions

  1. Prepare the sauce by mixing soy sauce, honey, brown sugar, and sesame oil in a bowl; set aside.
  2. Boil the sweet potato noodles in water for 10-15 minutes until tender. Drain and rinse under cold water.
  3. In a nonstick pan, cook the beaten eggs to make an egg crepe; slice into strips once cooled.
  4. Sauté beef in the same pan until browned; remove from heat.
  5. Sauté carrots, onions, mushrooms, and spinach until tender.
  6. Combine cooked noodles with the sauce, then add sautéed vegetables and beef; mix well.
  7. Serve warm garnished with sesame seeds if desired.
