  • 1 1/4 cup All-Purpose Flour
  • 3/4 cup Cake flour
  • 1 tsp. corn starch
  • 1/2 tsp. baking powder
  • 1/2 tsp. baking soda
  • 1/2 tsp. salt
  • 1/2 cup cold, unsalted butter, cubed
  • 1/2 cup light brown sugar, packed
  • 1/4 cup white granulated sugar
  • 1 large egg
  • 1 egg yolk
  • 2 cups milk chocolate chips (or semi-sweet)

Instructions

  1. Preheat your oven to 400°F.
  2. In a large bowl, whisk together the all-purpose flour, cake flour, cornstarch, baking powder, baking soda, and salt.
  3. In a stand mixer, cream cold cubed butter with light brown sugar and white sugar until fluffy. Add one egg and an egg yolk until combined.
  4. Gradually incorporate the dry ingredients into the wet mixture on low speed, then fold in chocolate chips using a rubber spatula.
  5. Measure out approximately six cookies weighing around 5.7 oz each and place on a lined cookie sheet.
  6. Bake for 10–12 minutes or until golden brown. Allow cooling for 15–30 minutes on the cookie sheet before transferring to a cooling rack.
