  • 300 g crumbled gingerbread cookies (Spekulatius or Lebkuchen)
  • 100 g melted butter
  • 500 g mascarpone cheese
  • 200 ml heavy cream
  • 100 g powdered sugar
  • 1 tsp cinnamon
  • 1 tsp gingerbread spice blend
  • 1 tsp vanilla extract
  • 300 ml whipped cream for topping
  • 50 g powdered sugar for topping
  • 1 tsp cinnamon for topping
  • Chocolate shavings and chopped nuts for garnish

Instructions

  1. In a mixing bowl, combine the crumbled cookies with melted butter until mixed well. Press firmly into the bottom of a serving dish.
  2. Whip together mascarpone, heavy cream, powdered sugar, cinnamon, gingerbread spice, and vanilla extract until fluffy. Spread half of this mixture over the cookie base.
  3. Add another layer of crumbled cookies and then the remaining cream mixture on top.
  4. In another bowl, whip the remaining heavy cream with powdered sugar and cinnamon until soft peaks form; spread over the last layer of cream.
  5. Garnish with chocolate shavings and chopped nuts, then refrigerate for at least 4 hours before serving.
