  • 1/2 teaspoon baking powder
  • 1/2 cup unsalted butter, melted
  • 1/4 teaspoon salt
  • 2 large eggs
  • 1 cup granulated sugar (for filling)
  • 1/4 cup all-purpose flour (for filling)
  • 1/3 cup fresh lemon juice
  • 1 tablespoon lemon zest

Instructions

  1. Preheat your oven to 350°F (175°C). In a bowl, mix together the flour, sugar, baking powder, melted butter, and salt until crumbly. Reserve 1/2 cup of the mixture.
  2. Press the remaining mixture into an 8×8-inch baking pan lined with parchment paper. Bake for about 12-15 minutes or until lightly golden.
  3. In another bowl, whisk together the eggs, sugar, flour, lemon juice, and zest until smooth.
  4. Pour the lemon mixture over the baked crust and sprinkle the reserved crumb mixture on top.
  5. Bake for an additional 20-25 minutes until the filling is set and lightly golden.
  6. Cool completely at room temperature before chilling in the refrigerator for at least one hour. Slice into squares and enjoy!
