  • 1 cup buttermilk (room temperature)
  • 1/2 cup granulated sugar
  • 1/2 cup unsalted butter (room temperature)
  • 2 large eggs (room temperature)
  • 2 tablespoons fresh lemon zest
  • 2 cups powdered sugar
  • 1/4 cup fresh lemon juice
  • 2 tablespoons unsalted butter (melted)

Instructions

  1. In a stand mixer bowl, combine warm buttermilk and yeast; let sit for about 5 minutes until foamy.
  2. Add eggs, butter, sugar, salt, lemon zest, and most of the flour; mix until combined.
  3. Knead on low speed for about 5-7 minutes until smooth.
  4. Place dough in a greased bowl; cover and let rise in a warm place until doubled in size (about 30 minutes).
  5. Prepare filling by mixing granulated sugar, brown sugar, and lemon zest.
  6. Roll out the dough into a rectangle; spread softened butter then sprinkle filling evenly.
  7. Roll tightly from one edge; cut into even pieces using dental floss.
  8. Place in a parchment-lined pan; cover and let rise for another 20 minutes.
  9. Bake at 375°F (190°C) for about 25-28 minutes until golden brown.
