  • 2 cups white sugar
  • 4 eggs
  • 4 egg yolks
  • 1/8 teaspoon salt
  • 1 cup unsalted butter, cut into cubes
  • 1/2 teaspoon vanilla extract
  • 3 (1-inch) strips of lemon peel
  • 1/2 cup lemon juice
  • 2/3 cup lemon juice or broth (replacement for limoncello)
  • 2 cup heavy cream
  • 1/2 cup powdered sugar
  • 3 (8-ounce) containers mascarpone cheese
  • 1 Tbsp lemon zest
  • 10 ounces crisp ladyfingers (about 39 larger or 57 smaller ladyfingers)

Instructions

  1. Prepare the lemon curd by combining lemon juice, sugar, eggs, and salt in a non-reactive saucepan. Cook over medium heat until thickened, then strain and stir in butter and vanilla. Chill.
  2. For the lemon syrup, boil sugar with lemon juice and zest until dissolved; cool.
  3. Create the mascarpone layer by whipping heavy cream with powdered sugar to stiff peaks, then fold into a mixture of mascarpone and lemon zest.
  4. Assemble by layering ladyfingers soaked in syrup with lemon curd and mascarpone filling. Repeat layers and chill overnight before serving.
