  • 1 cup dry green or brown lentils
  • 2 carrots, sliced
  • 4 cups vegetable broth
  • 1 onion, diced
  • 3 garlic cloves, minced
  • 4 large potatoes, peeled and chopped
  • ½ cup milk
  • 4 tbsp butter
  • Salt and pepper to taste
  • 1 can (14.5 oz) diced tomatoes

Instructions

  1. Heat olive oil in a large pot over medium heat. Add onion, carrots, and celery; cook until softened.
  2. Stir in garlic and cook for an additional minute.
  3. Add lentils, diced tomatoes with juice, vegetable broth, thyme, bay leaf, salt, and pepper. Bring to a boil then reduce to simmer for 25-30 minutes until lentils are tender.
  4. Meanwhile, boil salted water in another pot and add chopped potatoes. Cook until tender (15-20 minutes). Drain and mash with butter, milk, salt, and pepper until smooth.
  5. Serve the lentil stew generously over the mashed potatoes.
